Preparation

  • Put the oil in a saucepan and when it is hot add the onion and three cloves of finely chopped garlic and the other three whole garlic cloves.

  • Saute for 5 minutes, until the vegetables are soft.

  • Add the chorizo ​​and the ham, all cut into small cubes, and the cayenne peppers and fry for four minutes.

  • Add the chipotle ​​pepper, the paprika, and the crushed tomato.

  • Add the snails and the white wine and a pinch of salt.

  • Cook for 20 minutes

  • Add salt to taste and drizzle with olive oil
