Caracoles en Salsa Chipotle
Preparation
Put the oil in a saucepan and when it is hot add the onion and three cloves of finely chopped garlic and the other three whole garlic cloves.
Saute for 5 minutes, until the vegetables are soft.
Add the chorizo and the ham, all cut into small cubes, and the cayenne peppers and fry for four minutes.
Add the chipotle pepper, the paprika, and the crushed tomato.
Add the snails and the white wine and a pinch of salt.
Cook for 20 minutes
Add salt to taste and drizzle with olive oil

Half a kilo of snails (clean)
An onion
six cloves of garlic
200 grams of chorizo (in my case spicy)
100 grams of ham
Small can of chipotle
3 tomatoes or a 400-gram can of crushed tomato
Two or three cayenne peppers
Two tablespoons of chorizo pepper pulp
A glass of white wine
A teaspoon of paprika (hot or sweet, to taste)
Three potatoes
Salt
three tablespoons of oil
