Salsa di pomodori -Tomato Sauce (Vincenzo Agnoletti)
Ingredients:
Preparation:
Take the ripe tomatoes, rub them and remove the seeds and the water inside them
Boil them always stirring them around, so that they can cook quickly and not stick to the pan
When they are done pass them through a sieve
Reduce the sauce again with the lard and the oil, till the correct consistency
Season with salt and pepper
When it is cooked you can put it on fish, on top of meat, on chicken.
