Partridge Casseroled in Wine / Perdices en Guisados
Preparation
Pluck and clean the partridges,
Sear them on the fire or in a skillet
Put them in a small stewpot with diced fried cured ham, onion, parsley and spices, four cloves of crushed garlic and white wine
Add water
Cover tightly or, even better, seal the top of the pot with a flour and water dough
Let the partridges cook on a gentle fire
When they are done, stir up some egg yolks and pour them on top
Serve
Ingredients
6 partridges
4 tbsp olive oil
1/4 lb fried cured ham cut up in dice
2 chopped onions
4 sliced garlic cloves
4 Tbs parsley
500 ml / ¾ pint white wine
175 ml / 6 fl oz hot water
6 egg yolks
